As most you know, I’ve talked a lot recently about the new way I look at food and the things I choose to eat because I think it directly correlates to one’s health and so much more. Here’s the thing: eating this way so often requires a lot of steps. I can’t just order take out because it is convenient. To eat a very healthy diet requires that I go to the grocery store often and that I come back and cook. So yeah, I have to grill a chicken breast, roast some veggies, and make some kind of salad. The fact is, a lot of the time I want to eat healthy but I also don’t want to do all those steps. #TheStruggleIsReal
Enter the concept of Meal Prep with Suddenly Grain Salads that can be made (served warm or cold) and saved for later in the week as well. I love quinoa and order it at restaurants all the time but I don’t know how to make it interesting at home. Well, I recently tried the Harvest Grains option and I can’t wait to get my hands on the Mediterranean and Southwest options. Also, did I mention I have a coupon for you?
It was so incredibly easy and such an easy side to my chicken breast. And the great part? I made an extra chicken breast and I have extra Suddenly Grain Salad in the fridge for another meal. I also made some roasted brussels sprouts.Other things I loved about Suddenly Salad Meal Prep: everything was in the box (except the tablespoon of Olive Oil and Cold Water) and there are three easy steps.
First, you boil the quinoa in the bag it comes in. While that happens, you add the dressing packet to a tablespoon of water and a tablespoon of cold water and stir.Finally, you add the third packet which in the case of Harvest Grains is almonds and cranberries along with the quinoa.While all this was happening, I was also roasting some brussels sprouts. When you see the recipe (aka as I asked my dad one day how to make some great brussels sprouts), you’ll see that there is a trend for the food (even the healthy kind) I make. It’s simple and easy.
- Brussels Sprouts
- Olive Oil
- Balsamic Vinegar (Optional)
- Preheat the oven to 400 degrees
- While this is happening use kitchen scissors to divide each sprout in half
- In a large bowl, mix the sprouts with enough olive oil to coat them
- Place them in a pan
- Salt and Pepper to what you prefer
- Cook until they are roasted to your preference, turning them over as necessary
- Optional: Pour a bit of Balsamic Vinegar (to taste) on them when they are still warm (I like to do this in a large bowl so it's easy to mix)
Finally everything was roasted (I made the chicken in the oven as well with some olive oil, salt and pepper, garlic powder, and rosemary) and the Suddenly Salad aka the delicious quinoa salad was all mixed together and I was ready to chow down on my healthy and easy meal that took about 20 minutes to make from start to finish.Confession: I actually may have eaten some of the salad while the rest of the meal was cooking.
